Season the beef cubes with salt and pepper. Heat the oil in a skillet over medium-high heat. Add the beef and cook undisturbed for 2-3 minutes, until seared. Turn and brown the other sides for 1-2 minutes. Turn off the heat.

Add all remaining ingredients, except the beef, to the crock pot and stir to combine. Stir in the seared beef. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender.

Meal Prep Tip: If you plan to make this before work in the morning, prep the vegetables and cube the beef the night before. Store them in the fridge and complete the remaining cooking steps in the morning.

Stovetop Instructions: If you are short on time, this recipe can be adapted for the stovetop. After searing the beef, add the remaining ingredients directly to the same pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 45-60+ minutes, stirring occasionally, until the beef is tender and the sauce has thickened.
