Heat the oil in a pan over medium heat. Add the curry powder, onion powder, garlic powder, coconut milk, and crushed tomatoes (with liquid). Stir.

Add the cubed tofu. Cover and let simmer for 15 minutes.

Add in the riced cauliflower and cook until it softens. Serve.
