Cottage cheese pancakes with almond butter and strawberries

Put cottage cheese, oats, egg whites, and vanilla into a blender and blend until smooth.

Spray a skillet with some non-stick spray and pour batter into pan. The number of pancakes will depend on the size you prefer but spread them out so that they are thin, like a crepe. Cook until golden on both sides, flipping once.

Serve with nut butter and strawberries.
