Season the chicken breast with salt and pepper. Cook using one of the following methods: GRILL: Preheat the grill to medium-high heat. Grill the chicken for 5-7 minutes per side, until fully cooked. OVEN: Preheat the oven to 400°F (200°C). Place the chicken on a parchment-lined baking sheet and bake for 18-22 minutes, or until fully cooked. SKILLET: Heat a lightly oiled skillet over medium heat. Add the chicken and cook for 5-7 minutes per side, until fully cooked.

When the chicken is cool enough to handle, dice the chicken and set aside.

Make the dressing by mixing the Greek yogurt, oil, apple cider vinegar, lime juice, and taco seasoning until well combined.

Cook the corn according to package instructions.

In a mixing bowl, add the coleslaw, black beans, bell pepper, cooked corn, cilantro, and dressing. Toss until evenly coated. Add the diced chicken and toss to combine. Serve.
