Chickpea apple farro salad

Cook the farro: Add the water to a saucepan with big pinch of salt and bring to a boil. Add the farro and cook for 20-30 minutes, or according to the package instructions, until tender. Drain, fluff with a fork, and set aside.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Add the chickpeas to the baking sheet. Toss with the curry powder, just half of the oil, and a pinch of salt. Spread into a single layer and roast for 12-15 minutes, until lightly browned and slightly crisp. Set aside to cool slightly.

In a large bowl, toss the greens with the remaining oil, lemon juice, and a pinch of salt and pepper.

Serve the dressed greens with the cooked farro and top with roasted chickpeas, sliced apples, and crumbled goat cheese. Serve.
