    In a small bowl, mix the soy sauce, honey, and oil.

    Thread the chicken, pineapple, and bell pepper pieces onto the skewers, alternating the pieces. Brush the skewers with the marinade.

    Heat a large grill pan or skillet over medium-high heat and spray with a cooking spray.

    Add the skewers to the pan and cook 10-12 minutes, turning occasionally, until the chicken is fully cooked and the pineapple is caramelized. Serve.
