Combine the Greek yogurt, mayonnaise, and ketchup in a small bowl to make the yum yum sauce. Add a small drizzle of water and mix until the sauce reaches a drizzlable consistency. Refrigerate until ready to serve.

Heat the oil in a skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Cook for 8-10 minutes, until browned.

Add the garlic and ginger and cook for 1 minute, until fragrant. Add the cauliflower rice and peas and carrots and stir to combine. Cook for 1-2 minutes.

Make a well in the center of the skillet and crack the egg(s) into it. Let the eggs cook undisturbed until the whites are just set, then scramble them in the center before stirring them into the cauliflower rice mixture.

Add the soy sauce. Cook, stirring frequently, for 4-5 minutes, until some of the liquid has cooked off and everything is warmed through.

Season to taste with salt and pepper and serve warm with a drizzle of yum yum sauce.
