In a large skillet, cook the beef and onion over medium heat until the beef is browned and no longer pink, about 8–10 minutes.

Stir in the taco seasoning and a splash of water. Mix until evenly combined and cook for 1 minute.

Add the corn, salsa, tortilla pieces, and most of the cheese (reserving some for topping). Stir to combine and cook until heated through, about 3-4 minutes.

Sprinkle the reserved cheese on top and serve.
