Superfood salad with turmeric dressing

Cook the edamame according to package instructions. Drain and set aside.

Juice half of the orange(s) and slice the remaining half into wedges.

In a small bowl, whisk together the orange juice, olive oil, mustard, agave, turmeric, and a pinch of salt and pepper to make the dressing. Set aside.

In a large bowl, combine the lettuce, parsley, orange wedges, apple, edamame, and coleslaw mix. Toss to combine.

Drizzle with the dressing, then top with chia seeds and walnuts. Serve.
