Lemony chicken thigh skewers

Place the chicken cubes in a bowl and add oil, lemon juice, garlic, Italian seasoning, paprika, and a pinch of salt and pepper. Toss to coat the chicken evenly. Cover with plastic wrap and refrigerate to marinate for at least 20 minutes or up to overnight.

If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning. Remove the chicken from the fridge and thread it evenly onto the skewers.

Heat a grill or grill pan over medium heat. Cook the chicken for 6-8 minutes per side, until lightly charred and no longer pink inside. Serve.
