Place the chicken breasts in a pot and cover with water. Bring to a simmer and cook until the chicken is cooked through, about 10–15 minutes. Remove the chicken from the pot and let it cool slightly. Shred with two forks.

While the chicken cooks, prepare the quinoa with the water according to the package instructions. Fluff and set aside.

In a large bowl, combine the shredded chicken, cooked quinoa, and all remaining ingredients.
