Heat oil in a cast iron skillet over high heat and sear the roast for 4-5 minutes on each side, until browned but not fully cooked.

Transfer the roast to the slow cooker, including any drippings from the skillet. Add the remaining ingredients to the slow cooker and season with a bit more salt and pepper.

Cover and cook on low for 8-9 hours, or until the roast and vegetables are tender.
