In a small bowl, combine the peanut butter, ground ginger, apple cider vinegar, soy sauce, water and crushed red pepper to your desired spice level. Mix until it forms a sauce-like consistency. If the mixture is too thick, add another splash of water.

Heat oil in a large skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook for 8-10 minutes until browned.

Add the garlic and cook for 1 minute until fragrant.

Stir in the spiralized zucchini and peanut sauce. Mix well and cook for an additional 2-3 minutes until heated through. Serve and enjoy!
