Add oil, beef, peppers, mushrooms, and onion to a large pot. Cook 5-10 minutes until beef is browned and vegetables are softened.

Add remaining ingredients to the pot and bring to a simmer. Cook for 15 minutes. Break apart cream cheese by spreading it across the wall of the pot with the back of a spoon if necessary. Serve.
