Heat oil in a heavy pot over medium-high heat. Add onion and garlic and cook until softened, 5-8 minutes.

Stir in beef, ginger, thyme, tomato paste and some salt and pepper. Fry for about 5 minutes, stirring frequently until beef is browned.

Add in water and bring to a simmer. Stir in chopped spinach and simmer, uncovered, for 8-10 minutes. Serve.
