                    Put chicken breasts into a pot and cover with water. Heat to a simmer and cook for about 10-15 minutes until chicken is cooked through. Remove chicken from the water and set aside to lightly cool.

                    Shred the chicken with two forks and add it to a bowl. Add the mayonnaise, greek yogurt, curry powder, and some salt and pepper. Mix until chicken is fully coated.

                    Assemble sandwich by placing greens and chicken between two slices of bread. Serve.
