Prepare rice and water according to package instructions. Set aside.

Heat oil in a skillet over medium-high heat. Add pork, break apart into pieces, and cook until browned, about 4-6 minutes.

Stir in barbecue sauce, chili powder, some pineapple juice, and some salt and pepper. Cook until thickened, 1-2 minutes.

Transfer rice to a bowl. Top with barbecue pork, pineapple chunks, and sliced jalapeno. Serve.
