    Preheat the oven to 400°F (200°C).

    Layer garlic and lemon slices on top of a baking sheet. Place cod on top and season with italian seasoning and a dash of salt and pepper.

    Bake for 10-13 minutes or until cod is fully cooked and flakes with a fork.

    Squeeze roasted lemon on top and serve.

    Add the oil to a large skillet over medium-high heat.

    Add the shallot and cook for about 1-2 minutes, until soft.

    Add the lima beans, corn, and seasoning and cook, stirring occasionally, until heated through and tender, about 3-4 minutes.
