Soak skewers in water.

Heat oil in large skillet and add diced onion. Cook until softened, about 4 minutes.

Add half of garlic (reserving rest for dip) and cook for another 2 minutes.

In a bowl, mix together fried onion and garlic with the beef, parsley, cumin, coriander, and salt/pepper (to taste).

Form the meat mixture around the top of the skewers evenly and add to skillet. Cook 6-8 minutes or until done, flipping periodically.

Meanwhile, make the dip by mixing the greek yogurt, dill, and remaining garlic.

Serve the skewers with dip and enjoy.
