
Cheesy zucchini bake

Preheat oven to 350°F (180°C).

Slice the zucchini into thin half-moon shapes.

Soften the cream cheese in a large mixing bowl by microwaving for 30 seconds.

Mix the zucchini, Parmesan cheese, half the mozzarella cheese and Italian seasoning in with the cream cheese.

Spread the mixture in a lightly greased 8x8 inch glass baking sheet and bake for 30 minutes.

After 30 minutes sprinkle the remaining mozzarella cheese over the top and continue baking until the top is golden brown, about 15-20 more minutes.
