Pizza stuffed peppers

Preheat oven to 375 F (190 C).

In a skillet over medium heat, add the oil and garlic. Cook for about a minute until fragrant.

Remove and discard sausage casings. Add sausage to the skillet. Use a large spoon to break the sausage apart and continue cooking until browned.

Add in pasta sauce. Let simmer for a few minutes until sauce has thickened a bit.

Turn off heat and add into the skillet about 75% of the cheese and 75% of the pepperoni, reserving the rest for later. Mix until well combined.

Stuff peppers with sausage mixture and place in a greased baking dish.

Cook peppers for 20 minutes.

Remove from oven, sprinkle the remaining cheese and pepperoni on top of the peppers.

Continue cooking for 25 more minutes.
