Preheat the oven to 375°F (190°C).

Heat oil in a skillet over medium heat. Add the garlic, cooking for about 1 minute until fragrant.

Remove and discard any sausage casings. Add the sausage to the skillet, breaking it apart with a large spoon. Cook until browned.

Stir in the pasta sauce and let it simmer until the sauce thickens slightly. Turn off the heat.

Chop about 75% of the pepperoni and add it to the skillet along with about 75% of the cheese. Mix until well combined.

Stuff the peppers with the sausage mixture and place them in a baking dish.

Cook the peppers for 20 minutes.

Remove from the oven, sprinkle the remaining cheese and pepperoni on top, and return to the oven.

Continue baking for 15-20 more minutes. Serve.
