White bean turkey kale soup

Heat the oil in a pot over medium heat. Add the onion and garlic and saute for 3-4 minutes, until softened.

Add the turkey sausage and break it apart with a wooden spoon. Cook for 8-10 minutes, until browned and cooked through.

Stir in the white beans and vegetable broth. Cover and simmer on low for 10 minutes.

Add the kale, cover, and simmer for another 5 minutes, until wilted and tender.

Season to taste with salt and pepper and serve.
