Heat the oil in a skillet over medium heat. Add the chicken and cook for 6-9 minutes, stirring occasionally, until fully cooked through. Stir in the taco seasoning along with a splash of water and cook for 1-2 minutes more, until the chicken is evenly coated. Remove from heat.

To assemble, add the chicken to tortillas and top with salsa, cheese, and Greek yogurt. Feel free to add any additional low-calorie toppings you like, such as cilantro, lettuce, onion, hot sauce, etc.
