2 dash (1g)
2 dash (1g)
1 tbsp (18g)
1 medium (61g)
4 oz (113g)
2 slice(s) (64g)
1
Place the raw chicken in a pot and cover with water. Bring to a boil and cook for 10-15 minutes, until the chicken is fully cooked. Transfer the chicken to a bowl and let cool slightly. Once cool enough to handle, shred with two forks and set aside.
2
When the chicken has mostly cooled, toss the shredded chicken with the carrot, Greek yogurt, parsley, seasonings, and a pinch of salt and pepper. Mix until well combined.
3
Toast the bread if desired, then fill with the chicken mixture. Serve.
4
Meal Prep Tip: Store the chicken mixture in an airtight container in the fridge. Assemble the sandwich shortly before eating to keep the bread fresh.
