    Place the raw chicken in a pot and cover with water. Bring to a boil and cook for 10-15 minutes, until the chicken is fully cooked. Transfer the chicken to a bowl and let cool slightly. Once cool enough to handle, shred with two forks and set aside.

    When the chicken has mostly cooled, toss the shredded chicken with the carrot, Greek yogurt, parsley, seasonings, and a pinch of salt and pepper. Mix until well combined.

    Toast the bread if desired, then fill with the chicken mixture. Serve.
