
Stacked beef & bean tortillas

Preheat oven to 375°F (190°C).

Heat oil in a skillet over medium heat. Add the ground beef and cook until browned, 8-10 minutes.

Stir in taco seasoning and black beans. Cook until heated through, 1-2 additional minutes.

Lightly coat the bottom of a baking dish with cooking spray.

Arrange half of the tortillas in the bottom of the dish. Layer with half of the beef mixture, then half of the cheese. Repeat the layers with the remaining tortillas, beef, and cheese.

Cover with foil and bake for 10 minutes. Remove the foil and bake for another 5 minutes, or until the cheese is melted and bubbly.

Serve with a side of Greek yogurt and salsa for dipping.

Meal Prep Tip: Let the baked stacks cool completely. Wrap individually in foil, and store in the fridge or freezer. To reheat, bake in the oven at 350°F (175°C) until warmed through- about 10-15 minutes from the fridge, or 25-30 minutes from frozen.
