Heat the oil in a skillet over medium heat.

Add the chicken breasts and onions. Cook for 10-15 minutes, flipping the chicken and stirring the onions occasionally, until the chicken is mostly cooked.

When the chicken is nearly done, add the remaining ingredients and stir to combine. If needed, you can briefly transfer the chicken to a plate to make mixing easier.

Return the chicken to the skillet (if removed), and cook until the coconut milk is bubbling and has formed a sauce and the chicken reaches an internal temperature of 165°F (75°C). Serve.
