
Pepperoni pizza meatballs

In a bowl, mix together the beef, almond flour, egg, parmesan cheese, italian seasoning, and salt/pepper to taste with your hands.

Heat a large skillet over medium heat and add the oil.

Form the meatballs with your hands (16oz of meat should equal roughly 16 meatballs) and add the balls to the skillet.

Cook on all sides, totalling about 10 minutes or until done.

Remove and store meat balls in airtight container in fridge until ready to serve.

When ready to serve, preheat an oven or toaster oven to 400 F (200 C).

Top each meatball with about a tsp of cheese. Put in oven until slightly melted, about 2 minutes.

Remove and top each meatball with a slice of pepperoni. Return to oven and cook an additional 3 minutes.

Remove and serve with marinara sauce.
