In a small bowl, whisk together the maple syrup, balsamic vinegar, and a pinch of salt and pepper until blended.

Place the pork chops in a shallow dish and pour just enough of the mixture over them to coat. Reserve the rest for basting later.

Heat a grill pan or skillet over medium heat and cook the pork chops for 3-4 minutes on each side, or until a thermometer reads 145°F (63°C). Baste with the reserved mixture during cooking.
