In a small bowl, combine the lime juice, soy sauce, vinegar, oregano, smoked paprika, cumin, and oil. Whisk together and add the pieces of seitan to the bowl. Toss to coat and set aside for 10 minutes to marinade (optional).

Heat a non-stick skillet over medium heat. Pour the seitan and marinade sauce into the skillet and cook until the seitan is browned and crispy in places, about 5 minutes.

Warm tortillas in microwave by wrapping them in a towel and microwaving for 15-20 seconds.

Top tortillas with seitan, salsa, and cilantro. Serve.
