Heat oil in a large pot over medium heat. Add ground pork, italian seasoning, and some salt and pepper. Break meat apart and cook until browned, 8-10 minutes.

Add broth and potatoes. Bring to a boil. Reduce heat and simmer until potatoes are fork-tender, 10-15 minutes.

Turn off heat and stir in kale until it wilts. Season to taste with salt and pepper. Sprinkle crushed red pepper on top and serve.
