1. Honey dijon salmon

Preheat oven to 350 F (180 C)

Take half of the mustard and spread it over the top of the salmon.

Heat the oil over medium high heat and sear the top of the salmon for about 1 or 2 minutes.

Meanwhile, combine remaining mustard, honey, and garlic in a small bowl.

Transfer salmon to a greased baking sheet, skin side down, and brush on the honey mixture all over the top.

Bake for about 15-20 minutes until done.

2. Spinach cauliflower mince

Cook riced cauliflower according to package.

Meanwhile finely chop the spinach and garlic.

When cauliflower is done and still hot, add in the spinach, oil, garlic and some salt and pepper. Mix well.

3. Sauteed mushrooms

Heat oil in a skillet over medium heat.

Add mushrooms to the skillet and cook until softened, about 5-10 minutes.

Season with salt/pepper and any spices or herbs you have on hand. Serve.
