Preheat oven to 375F (190C). Add paper liners to a muffin tin for each muffin (listed above in the serving size of the recipe) and use a baking spray to grease the insides.

Blend all ingredients together in a blender until smooth.

Fill muffin liners evenly with the mixture and bake for about 20 minutes until a toothpick inserted into the middle of a muffin comes out clean. Remove from oven and let cool. Serve.

Let leftovers cool completely and then store in an airtight container in the fridge.
