Heat oil in a skillet over medium heat. Add carrots and cook for about a minute. Season with some salt and pepper and transfer to a plate. Set aside.

Add beef to the same skillet over medium heat. Season with some salt and pepper, break up the meat and cook until browned, 5-8 minutes. Stir in soy sauce and once it starts to simmer, turn off the heat.

In a small bowl, mix together the mayonnaise and sriracha. Stir in a small splash of water so that the sauce thins out and reaches a drizzling consistency.

Top tortillas with an even amount of beef and top with carrots and cucumber. Drizzle sriracha mayo and lime juice and sprinkle cilantro on top. Serve.

Meal prep note: store meat, veggies, and sriracha mayo separately in the fridge and when ready to eat, reheat meat and finish assembling the tacos.
