
Steak with walnut scallion sauce

(Optional) Preheat oven to 350F (180C) and toast walnuts on a baking sheet for 8-10 minutes until toasty and golden.

Heat a cast iron skillet over medium heat and add butter. Season steaks with salt/pepper to taste and cook in skillet, flipping once, for 10-12 minutes or until steak reaches 130F (55C) for medium rare. Transfer to plate and let rest.

Reduce heat and add in green onions and cook until blackened and soft, about 5 minutes. Transfer to cutting board and cut into 1 or 2 inch pieces.

In a bowl, add the walnuts, oil, green onions, red wine vinegar, mustard and garlic. Stir.
