Cook rice according to package instructions. Set aside.

Preheat oven to 350°F (180°C). Place salmon skin side down on a baking sheet and bake salmon for 14-16 or until salmon is fully cooked.

Mix the dijon, oil, garlic, lemon juice, and some salt into the rice.

Top the rice with salmon and cucumber and serve.
