Lime chili chicken skewers

In a large bowl, whisk together the oil, lime juice, spices, and a pinch of salt (for a less spicy dish, you can reduce or omit the cayenne). Add the chicken cubes and toss to coat evenly. Cover the chicken and refrigerate to marinate for at least 15 minutes or up to overnight.

If using wooden skewers, soak them in water beforehand to prevent burning.

Thread the chicken evenly onto the skewers. Heat a grill or grill pan over medium heat and cook the skewers for 4-6 minutes per side, until lightly charred and no longer pink inside.

Serve with an extra drizzle of lime juice.
