
Cheesy broccoli egg bake

Preheat oven to 350°F (175°C). Lightly grease a baking dish with cooking spray.

Toss broccoli with oil, season with salt and pepper, and spread in an even layer in the baking dish. Roast until beginning to brown, about 10 minutes.

Meanwhile, in a blender, combine eggs, cottage cheese, garlic powder, and a pinch of salt and pepper. Blend until smooth, then stir in the cheese.

When the broccoli is done, remove from the oven. Pour the egg mixture over the broccoli.
