Preheat oven to 450°F (230°C).

In a medium bowl, stir together the garlic powder, ground ginger, garam masala, chili powder, Greek yogurt, oil, and a pinch of salt and pepper.

Add the cubed tofu, sliced onion, and sweet peppers. Toss to coat evenly.

Spread the mixture on a foil-lined baking sheet in a single layer. Roast for 18-20 minutes, or until the tofu is crispy and browned. Serve and enjoy!
