Add quinoa, almond milk, chopped apples (reserve a small bit to top with at the end), and cinnamon to a small saucepan over low heat. Bring to a simmer and cook for about 10-20 minutes or until quinoa is soft.

Transfer mixture to a bowl and top with with remaining chopped apples and a drizzle of maple syrup. Serve.
