Preheat the oven to 400 F (200 C).

Grease a baking sheet or a rack to place on the baking sheet (for added crispness).

Place the egg whites in one bowl and mix together the almond flour, parmesan, italian seasoning, and salt/pepper to taste in another bowl.

Dip each zucchini slice in the egg white to coat it and then put it in the almond flour mixture and coat all sides. Place on baking sheet.

When all slices are done, bake for about 7 minutes on each side or until crisp and browned. Broil for a minute for added crispness.

Serve with a side of marinara.
