    Preheat the oven to 400°F (200°C).

    Layer garlic and lemon slices on top of a baking sheet. Place cod on top and season with italian seasoning and a dash of salt and pepper.

    Bake for 10-13 minutes or until cod is fully cooked and flakes with a fork.

    Squeeze roasted lemon on top and serve.

    Preheat oven to 375 F (190 C) and grease a baking sheet.

    Place mushrooms in a layer on the sheet.

    Zest about half the lemon and sprinkle it on the mushrooms.

    Juice the whole lemon and add the juice to the mushrooms.

    Sprinkle parmesan, garlic, and seasonings over the mushrooms and toss to coat.

    Bake for 12-15 minutes, until brown and soft. Stir occasionally.

    Combine all ingredients except bacon in a microwave-safe bowl.

    Put in microwave until it's soft enough to mash with a fork, approximately 5 minutes, but timing will vary depending on your microwave. Check throughout process.

    Meanwhile cook the bacon in a skillet, chop it up, and set the grease aside.

    Once the cauliflower mixture is soft, pour the bacon grease and chopped up bacon over it, and mash and mix with a fork.
